Cracked Brownie Batter Muffins

Cracked Brownie Batter Muffins

Ingredients

• 12 ounces of Cracked Brownie Batter Nut Butter
• 2 eggs
• 1/4 cup raw honey
• 1 teaspoon vanilla extract
• 1 teaspoon baking soda 1/2 teaspoon cinnamon
• pinch of salt
• 1/2 cup Enjoy Life mini chocolate chips For chocolate glaze:
• 1/4 cup Enjoy Life mini chocolate chips
• 1 tablespoon coconut oil

Instructions:
1. Preheat oven to 325 degrees.
2. Place all brownie ingredients in a bowl and mix well to combine.
3. Pour thick batter into 9 silicone muffin liners.
4. Bake for 20-25 minutes. Let cool.
5. Mix together chocolate chips and coconut oil in a double boiler or microwave and pour over brownies.
6. Eat up and enjoy the taste of brownie batter. Meaning love.

Cinnamon Roll Balls

8-10 balls

Ingredients

• 10 dried dates, pitted

• 12 ounces cinnamon roll cracked nut butter

• 1/2 cup unsweetened shredded coconut

• ½ Tbsp. cinnamon

• Pinch of salt

• melted coconut butter, to top

Instructions

1. Place dried dates in a food processor and pulse until broken down.

2. Then add nut butter, coconut, cinnamon and salt and pulse until well combined.

3. Use your hands to roll small bite-size ball shapes.

4. Top with melted coconut butter.

5. Eat and imagine they are cinnamon rolls. They’re not, but the mind is able to do pretty cool things.

6. Refrigerate leftovers. If there are any!

Cracked Oat Bars

Cracked Oat Bars

• 2 cups gluten free rolled oats

• 12 oz. of Cracked Nut Butter cookie dough flavor-room temperature

• 1/2 cup shelled sunflower seeds

• 1 cup Let’s Do Organic large fancy shredded unsweetened coconut flakes

• 1/4 cup Chia seeds

• 1/4-1/2 cup organic virgin coconut oil-melted

Mix together thoroughly with hands and place in balls on wax or parchment paper and freeze OR spread in an 8 x 8

pan and freeze. Cut into squares and enjoy!

YUTAN, Neb. — Personal trainers Paul and Megan Potts’ clients all were looking for something sweet to eat.

After some experimenting, the couple came up with a recipe for a healthy spread their clients could use on crackers, toast, oatmeal or fruit.
“We chose the ingredients for their health benefits. It just kind of ended up tasting really good,” Megan Potts said.

Think Nutella or Cookie Butter, without the guilt.

The creation — now named Cracked Nut Butter — took off with the Pottses’ clients and their friends. Now in flavors like Brownie Batter, Cookie Dough and Cinnamon Roll, it’s sold in more than 30 stores, including local Hy-Vees and in nutrition stores in Texas and Arkansas.

And it’s all made in the Pottses’ Yutan basement in a 185-square-foot commercial kitchen.
Launched in the summer of 2012 and now putting out about 27,000 12-ounce jars per month, the business hopes to expand to Mead, Neb., where the Pottses plan to build a new production facility within the next six months and hire about 10 people to add to their full-time production staff of three. { Read More }
